Dietary food recalls for hispanics
The purpose of this research project was to modify and translate a food recall form to Spanish in an effort to make it comprehensible for the Hispanic population. The focus of this study involved 21 Hispanic students enrolled in two English as a Second Language (ESL) class from a church and community college in Bloomington, Illinois. The study participants were given the dietary food recall form, and asked to annotate all the food consumed in a twenty-four hour period. The findings indicated that the participants found the translated version of the food recall form more comprehensible and gained a better understanding of food portion size. Portion size was discussed and examples were provided which made the participants become more aware of their eating habits. These findings support the idea that language is an important factor in health education especially in Hispanics.
